The Jefferson County Extension Homemakers are selling Georgia shelled pecans and raw peanuts.
A 5-pound box shelled fancy pecan halves is $50; or a 5-pound cloth bag of shelled peanuts is $14.
According to a spokesman, these nuts are excellent for gift-giving, freeze well, and are great for use in any recipe. The pecans and peanuts can be picked up at the Jefferson County Extension Office, 500 Idaho St.
For additional information, contact Mary Ann Kizer, county Extension agent family and consumer sciences, at 870-534-1033 or e-mail email@example.com.
This microwave peanut brittle recipe makes for a good holiday treat.
1 cup sugar
1 cup raw peanuts
½ cup light corn syrup
1 Tablespoon butter
1 teaspoon vanilla
1 teaspoon baking soda
Note: When making candy, always stir in one direction only to avoid large crystals.
Cover cookie sheet with foil. Butter top of foil. In a 2-quart microwavable glass container, mix the sugar, peanuts, and light corn syrup. Microwave on high for four minutes. Remove, stir, and return to the microwave for four more minutes. Remove, add vanilla and butter and stir. Microwave two more minutes. Remove from microwave and add baking soda. Stir until brittle is golden brown color. Pour onto buttered foil covered cookie sheet. Break into pieces when cool.
