Health department inspects food service establishments


The Arkansas Department of Health regulates the sale of food at restaurants, bars, daycares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units, concession stands and other facilities. Inspections are made unannounced by environmental health specialists. The food safety program consists of plan reviews, pre-opening inspections, permits, routine and follow-up inspections of food service establishments, investigation of complaints, and education of food service workers to promote safe food handling practices.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• McDonald’s, 3610 Camden Road. Date of inspection June 20. Don’t store food on floor in walk-in freezer (corrective action on site during inspection); need soap and paper towels at hand-washing sink (corrective action on site during inspection); keep bread covered after opening; sanitizing test strips - quat. 200.

• Randall L. Williams Correctional Facility, 7206 W. Seventh Ave. Date of inspection June 20. Sanitizer strength (chlorine) automatic dishwasher - 100-200 ppm; back door cooler not working, needs repair.

• Colonial Steakhouse, 111 W. Eighth Ave. Date of inspection June 20. Critical violation #23 — needs consumer advisory warning on menu. Plates, bowls and cups should be stored face down to prevent contamination; seal on cooler door needs repaired; need test strips to test sanitizer strength; personal fan needs cleaned; trash cans in kitchen area need lids; some flooring not cleanable; some flooring needs cleaned.

• Colonial Steakhouse, 111 W. Eighth Ave. Date of follow-up inspection July 8. All previous violations corrected except: Seal on cooler door needs repaired.

• Arnold’s Place, 2722 Blake St. Date of inspection June 19. Hair restraints in the kitchen area; garbage cans need lids; need to clean fans in establishment. All drinks must have a lid and straw (corrective action on site during inspection); need paper towels at handwashing sink (corrective action on site during inspection).

• Crenshaw Springs Water Park Concession, 9801 Dollarway Road, White Hall. Date of inspection June 19. OK to operate - permit pending.

• Kentucky Fried Chicken, 2707 W. 28th Ave. Date of inspection June 19. Follow-up inspection; previous violation corrected.

• Motor Way Grocery, 3432 U.S. 65 South. Date of inspection June 13. No current permit posted. Critical violation #14 — Dishes not sanitized in manual warewashing. Critical violation #21 — Deli meats kept over 24 hours must be date marked. Hair restraints should be worn. Need test strips to test sanitizer strength. Need hot water in restrooms. Toilet room doors should be self closing. Trash cans in kitchen area need lids. Lights in kitchen area should be shielded.

• Motor Way Grocery, 3432 U.S. 65 South. Date of follow-up inspection June 19. Follow-up inspection; All previous violations corrected except: No current permit posted; need test strips to test sanitizer strength; need hot water in restrooms; lights in kitchen area should be shielded.

• Brookshire Food Store, 2800 Hazel St. Date of inspection June 18. Condensation leaking in dairy cooler in back of store.

• Brookshire Food Store, deli, 2800 Hazel St. Date of inspection June 18. Sanitizer strength (manual dishwashing) chlorine - 100 ppm. Critical violation #19 — Hot holding temperatures out of safe range (must be 135 degrees F or above). Critical violation #20 — Some cold holding temperatures out of safe range (must be 41 degrees F or below.) Food out of its original container must be labeled. Several insects observed during inspection in kitchen deli area. Food must be stored at least six inches off the ground.

• Brookshire Food Store, deli, 2800 Hazel St. Date of follow-up inspection June 26. All previous violations corrected except: Food out of its original container must be labeled.

• Brookshire Food Store, 5805 Dollarway Road. Date of inspection June 18. Need to check produce cooler, should be 41 degrees (or) below, was reading around 45 degrees F. Light covers need to be cleaned. Trash cans need lids.

• Brookshire Food Store, deli, 5805 Dollarway Road. Date of inspection June 18. Missing lights under vent hood.

• Leon’s Catfish, #18 Chapel Village. Date of inspection June 10. Make properly date marking on all food when placing in cooler (shrimp and breading.) Keep wiping cloths in a sanitizer solution after each use. Need to replace cutting boards. Need to replace light in cooler. Floors are not cleanability surface. Need more lighting in the dish washing area. Need trash can lids in kitchen area.

• Leon’s Catfish, #18 Chapel Village. Date of follow-up inspection June 17. All violations corrected during follow-up visit. Did replace cutting boards.

• McDonald’s, 107 S. Blake St. Date of inspection June 17. Make sure handwashing sink has paper towels (corrective action on site during inspection). Don’t block handwashing sink. Complaint made about sweet tea.

• Community Empowerment Council, 2501 S. Cherry St. Date of inspection June 17. No violations observed during time of inspection.

• China Garden Buffet, 7203 Sheridan Road, White Hall. Date of inspection June 17. Sanitizer strength (automatic dishwasher) chlorine - 100 ppm. Critical violation #8 — Handwashing sink blocked. Critical violation #8 — need paper towels or hand drying device at handwashing sink. Critical violation #14 — Inside of ice bin needs cleaned. Critical violation #20 — Some cold holding temperatures out of safe range. Improper thawing methods used. Outer openings should be sealed in order to prevent pests from entering. Observed several insects in kitchen area. Food in coolers and freezers should remain covered to prevent contamination. Food should be at least six inches off the ground. Wiping cloths should be kept in a sanitized solution between uses. Scoops should be food grade and have handles. Need lids on trash cans in kitchen area.

• China Garden Buffet, 7203 Sheridan Road, White Hall. Date of follow-up inspection June 26. All previous violations corrected except: Observed several insects in kitchen area. Food in coolers and freezers should remain covered to prevent contamination. Food should be at least six inches off the ground. Wiping cloths should be kept in a sanitized solution between uses.

• Huddle House, 7735 Sheridan Road, White Hall. Date of inspection June 17. Critical violation #14 — No reading detected for sanitizer in automatic dishwasher. Observed several flies throughout establishment. Need lids on trash cans in kitchen area. Floors in kitchen area need cleaned.

• Huddle House, 7735 Sheridan Road, White Hall. Date of follow-up inspection June 26. Sanitizer test - bleach 100 ppm in automatic dishwasher. Previous violations corrected except: Observed flies throughout establishment. Need lids on trash cans in kitchen area. Floors in kitchen area need cleaned. New violation: Hot water in handwashing sink not working.

• Plaza Hotel, #2 Convention Center Drive. Date of inspection June 16. Restaurant not in use during time of inspection. Manager said all foods in cooler and freezer will be thrown away. He will speak to CISCO about whether the canned goods are still safe to serve or not. He will call health inspector before they open the kitchen. Back door needs seal to prevent pests from entering. Cooler needs cleaned out. Floors need cleaned. Some ceiling tiles missing - needs replaced. Some walls need repaired. More lighting needed in some parts of kitchen. Some lights need shielded.

• Thunder Lanes, 1600 E. Harding Ave. Date of inspection June 13. Critical violation #26 — Toxic substances should be properly labeled with identifying information on them (corrective action on site during inspection). Need test strips to test sanitizer.

• Bright Beginnings Learning Center, 501 W. Second Ave. Date of inspection June 13. No current health (permit) posted. Critical violation #8 — Don’t block handwashing sink (corrective action on site during inspection). Critical violation #21 — Make sure cooler is 41 degrees F (or) below for proper cold holding temperature (corrective action on site during inspection). Need thermometers in all freezers.

• Chili’s, 5511 Olive St. Date of inspection June 27. Chlorine test 75-100 ppm sanitizing solution. Need to cover all food (pecan pork). Need to replace cutting board. Trash cans need lids.

• Mr. Petroleum, 3100 Hazel St. Date of inspection June 23. Complaint - customer said she was served spoiled chicken. Seals on cooler doors need repaired. Several flies observed during inspection. Foods should be stored at least six inches off the ground. Improper thawing methods used. Foods should be covered to prevent contamination.

• Mr. Petroleum, 3100 Hazel St. Date of follow-up inspection June 27. Previous violations corrected except: Seals on cooler doors need repaired. Several flies observed during inspection. Employee told health inspector that they threw away all the chicken in the reach-in cooler after inspectors left on Monday (June 23) and then cleaned out the cooler so that it would not smell as bad. To thaw, employee told inspector that they thaw it out by running cold water over the frozen chicken then put it on ice and into the reach-in cooler to use in a day.

• Simplee’s Barbeque, 700 E. Harding Ave. Date of inspection June 26. No violations observed during time of inspection.

• Outlaw’s Smokehouse (mobile), 3818 W. Sixth Ave. Date of inspection June 23. Critical violation #20 — Coolers must be at 41 degrees F or below. Critical violation #23 — Menu must have consumer advisory warning if serving raw or undercooked food. Need test strips to test sanitizer strength. All lights must be shielded or shatterproof. Hot water must be available at sinks. No food in mobile at time of inspection.

• Oops I Forgot, 8600 Highway 256, Wright. Date of inspection June 23. Need to label ice bags with store name, phone number and address. Sanitizing solutions should be 50 to 100 ppm (need to add more water - less bleach.) Floors not a cleanability. Garbage cans need lids. Standing sewage, not properly disposed. Need to dust counters where can goods are stored.
